Ingredients

  • 6 slices bacon, chopped
  • 3 tablespoons butter
  • 1 red onion, sliced thin
  • 2 pounds fresh green beans, trimmed and snapped
  • 8 small new potatoes, diced
  • 1 large clove garlic, minced
  • 1/4 cup chicken broth
  • 1 1/2 teaspoons white balsamic vinegar
  • salt and pepper to taste

Directions

  1. Place the chopped bacon in a skillet, and cook over medium heat, stirring occasionally, until evenly browned, 8 to 10 minutes. Drain the bacon pieces on a paper towel-lined plate.
  2. Melt the butter in a skillet with a lid over medium-low heat, and cook and stir the onion until translucent, about 5 minutes. Stir in the cooked bacon, green beans, potatoes, garlic, and chicken broth. Bring to a boil, cover, and simmer over low heat until the green beans are tender, about 10 minutes. Sprinkle with vinegar, salt, and pepper, and serve.

Ingredients

  • 4 1/2 cups cooked and mashed sweet potatoes
  • 1/2 cup butter, melted
  • 1/3 cup milk
  • 1 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter
  • 1 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
  3. Bake for 25 minutes in the preheated oven, or until golden brown.

Ingredients

  • 6 medium russet potatoes, peeled and cubed
  • 1/2 cup warm milk
  • 1/4 cup butter or margarine
  • 3/4 teaspoon salt
  • Dash pepper

Directions

  1. Place potatoes in a saucepan and cover with water. Cover and bring to a boil; cook for 20-25 minutes or until very tender. Drain well. Add milk, butter, salt and pepper; mash until light and fluffy.

Ingredients

  • 1 (7.5 ounce) package dry cornbread mix
  • 1 cup butter
  • 2 onions, chopped
  • 1 green bell pepper, chopped
  • 6 stalks celery, chopped
  • 1 pound pork sausage
  • 16 slices white bread
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup chopped fresh parsley
  • 2 eggs
  • 4 cups chicken stock

Directions

  1. Prepare corn bread as directed on package. Cool, and crumble.
  2. Melt butter in a large skillet over medium heat. Cook onions, bell pepper, and celery in butter until tender, but not brown. In another pan, cook sausage over medium-high heat until evenly browned.
  3. Place corn bread and bread slices in a food processor. Pulse until they turn into a crumbly mixture. Transfer mixture to a large bowl. Season with sage, thyme, poultry seasoning, salt, and pepper. Mix in chopped parsley, cooked vegetables, and sausage with drippings. Stir in eggs and chicken stock. This mixture should be a bit mushy. Transfer to a greased 9x13 inch pan.
  4. Bake at 325 degrees F (165 degrees C) for 1 hour.
